Sockeye Salmon Burgers

Just because I can make a fresh sockeye burger does not mean I won't eat a Salmon patty made from a 2 dollar can of salmon.

This recipe is different than the ‘ol Salmon Patties… though I do LOVE an old fashion salmon patty (croquette) on a homemade biscuit. I’m not turning my nose up to canned Salmon -though look where it came from. It’s a great money saver. This is a light burger, packed with flavor- that can be eaten with a bun or without.          

This vlog also contains video of a rainbow that was in our cove this week. The Bible talks about a rainbow being a promise & hope. I needed that this week. I have always been 200% when it comes to work. I think seeing my father work three jobs to make ends meet… might have engraved that into my character.

 

My first job was at the age of 15, I BEGGED my mom to let me get a job and she patiently drove and picked me up each day. I started as a “hostest” at Swensen’s Ice Cream Parlor and Restaurant. In my mind, i was going to work each job there; some 4 years later, i had: soda fountain, waitress, dish, cook, shift manager. My next job was men’s formalwear (gingiss). I would work THROUGH the night during busy seasons, design print ads, do the decor for the store front windows and work & MC all the trade shows. I can honestly say, I have given everyone I worked for a really good deal… hard work. Even at the TV Station now days, i work a full day… leave to pick up kids and fix dinner, then work on the computer way into the night for work, not to mention appearances here and there. I’m proud of hard work, but with that hard work… I am adding something that was missing- BALANCE. Here’s a great article on balance: http://tinybuddha.com/blog/5-ways-to-find-your-balance/ 

You can only push so much, and then the body says, “you WILL slow down”. I had what they “think” was seizure activity, not a big siezure- a simple one, but coming out of it was hard. I found myself grasping for words and my speech was slowed slightly. It scared me. I am fine now. I am on medication; but also found there are natural treatments suggested by others out there. You KNOW me, I will be doing these as well. If you’re interested google COCONUT OIL and seizures (btw also shown to help: alzheimer’s, some Autism, natural SPF sun protection- what a resource!) I have actually used coconut oil for a couple of years for sun protection, but now I’m seeing there is so much more it’s good for.              

This Rainbow you see in the video, was so much more than the video shows… BRILLIANT and DOUBLE (didn’t notice that until after my daughter showed me a picture) …we all felt like the guy on you tube that went viral…. “dude wow that’s a double rainbow all the way…” ( http://www.youtube.com/watch?v=OQSNhk5ICTI ) It was though, a beautiful gesture from above: one of hope of another day to come. A peace in what ever that day held.

I have missed work for 4 days, thats a lot for me… and yet no one ever left this world saying, “I wish I spent more days at work” EVEN when they loved their job, as I do.

I am Looking forward to seeing you all next week (though I have to hire a driver to get me there temporarily) and I am looking forward to my morning YOGA and my weekend Yoga/standup Paddle boarding (both teach not only physical balance but are a good reminder of life balance). I am looking forward to getting home after giving my all, and working on me. ME? Damn, that sounded selfish. HOWEVER, your employer has a better employee, your kids have a better mother & husbands have better wives… if you invest in YOU.

I taped this while out (hey, i gotta make food for the family anyway- I just hit record) I looked back at it and thought… YOU LOOK TIRED (actually I said something not so “pg”, you can fill it in, hahaaa). I also edited out some time where words didn’t come to me so fast. I’m not proud of my appearance in this (and I’m WAY better now) but I’m kinda’ proud of these Salmon Burgers and fish is good for the brain! Enjoy and lets talk about investing in the right things… ideas? Post them…

SALMON BURGER:

PLANK OF SALMON (YES GRAB 2 CANS IF YOUR RUNNING TIGHT)              skinned and rough chopped in food processor (unless you have canned)

3 EGGS (I WENT SKINNY AND USED EGG WHITES)

RED ONION

1 SMALL BOTTLE OF CAPERS

LEMON ZEST/ JIUCE OF HALF A LEMON

DILL

LEMON BALM

SALT & PEPPER

DASH OF CAYENNE

3/4 CUP OF BREAD CRUMBS (I USED PANKO)

* play around with this… and don’t not make it if your missing something- look for another flavor to compliment.

 

YOGURT… hold the mayo

1 CUP PLAIN GREEK YOGURT

2-3 CLOVES OF GARLIC

FINELY CHOPPED CUCUMBER

FINELY CHOPPED DILL

SALT/PEPPER

DASH OF CAYENNE

…CAN ADD CAPERS IN THIS AS WELL

    I was sorry to read that you had a health scare in April and I hope that you’ve been able to slow down a little. Several years ago I had a similar episode when I was visiting family in Omaha (a very stressful time) and I’m happy to say once I started working on my stress level it never happened again. Sure hope yours will be the same. We women just push ourselves and then we’re no good to anyone; we have to learn that it’s OK to take a few hours to ourselves each day. You’re the best KK!!
