What an interesting week… i was invited to meet with a great culinary retailer to brainstorm ideas. i also had to undergo an EEG this week, so “Brainstorming” was somewhere between Ironic and just plain Humorous! If you’re wondering, i do have a brain & it seems to be operating, just fine! (There goes all the excuses i was going to use- Haaa) I know you will be “shocked” but i got that same ‘ol prescription: shed some stress. CVS said they didn’t fill those, so i headed for the kitchen.
Thursday on the Entertainment & Opinion TV Show i host, the Indigo Girl’s Amy Ray stopped in for an interview and to play a couple of songs. i don’t think the Doctor ordered her there, but an Angel may have. It’s some of the very music I listen to… to chill… to become “closer to fine”. In fact, one of the IG songs is a great reminder to RE Focus your energy, “…learn how to starve the emptiness and feed the hunger”.
This entry is about a simpler time, but with the style of today. i hope it inspires you to take a second look at some of Mom’s Old Standbys. Every Mom out there has had to open a pantry and make magic happen. The key is to have fun with it and not give up when it just simply did not work. This is a recipe for “Turkey Meatloaf” but i openly encourage you to play with the products & herbs you have. Turkey is a great low fat alternative to the greasy bricks of meat you may have had in the past. PLEASE look for hormone/antibiotic free meat (don’t know why? Start googling!!!) i simply put the peppers on the outside rather than chopped in the filling and don’t be too snobby as to put some ketchup on top. DO… look for ketchup w/out corn syrup. (might need that google box again… see how much quicker cancers feed off the more processed sugars).
TODAY’S TURKEY MEATLOAF (because tomorrow it could change)
1 POUND GROUND TURKEY
1 CAN OF TOMATO PASTE
2 EGGS
1/2 CUP (OR SO) CHOPPED ONION
3/4 CUP OF BREAD CRUMBS
FRESH THYME (ABOUT A TSP)
1 TABLESPOON CRUSHED GARLIC
2 TABLESPOONS WORCHESTER SAUCE
SALT/PEPPER (AROUND A HALF TSP EA)
***remember… meat loaf is the old school American pantry cleaner. If you don’t have these favors, add ones you have or like.
STUFF IN HOLLOWED OUT PEPPERS
BAKE IN CASSEROLE DISH AT 350 COVERED / CLOSE TO AN HOUR
ADD KETCHUP (with one part honey one part chipotle pepper sauce mixed in) ON TOP / UNCOVER / COOK ANOTHER 15 MINS

This is just what I need. Saturday I bought some of the colored bell peppers that Ingles had on sale last week and I’ve been looking for a good stuffed peppers recipe. Now I have one. Thanks for sharing this. Love your recipes and cooking videos even though I’m not a good cook.
I tried this and they turned out good. They all looked good and the yellow one tasted good (the other three are in my fridge) I used a little barbecue sauce on top instead of ketchup. Thanks for posting a good easy recipe that even a not so good cook like me can use to make a tasty meal.
