My trusty ‘ol FLIP Camera, is still with us… but is on his last leg. This was shot with my Christmas Present, a “BLOGGIE” by Sony. I am still learning this, the lighting/color is definitely different- looking for settings. It also kept turning turning off after about a minute, hoping thats a setting as well. The results… are a pieced together vlog, and though I thought I had captured the whole meal (truffled mashed potatoes, skinny asparagus & Salmon) I did manage to get enough of the Salmon recipe on tape to show you.
In this world of HUSSLE… GO, go, go… Advertising has convinced people that you “have to” settle with fast food. Now, I work in television & advertising is a big part of it, but that is just not true. There are MANY meals that are fast and healthy that are not just a salad. (This is one) I got this from the food network site, it’s a Giada recipe and it is GOOD! Now, I named it- so it may not show up under this name. Infact, I almost named it “ANOTHER Salmon recipe”, but this one is better than just “another”. Jason raved about it, LOTS of flavor for a salmon dish! It cooks at 500 degrees for just 20-25 minutes (full plank of salmon). The Foil it cooks in makes clean up, on a weeknight… a breeze! I pared it with (oh no… I did) instant Mashed potatoes, but added some truffle oil to make it special. The baby asparagus, I chopped and put in a colander. Just drop the colander in boiling water and then pull back out after 5-10 minutes.
This was a 30 minute meal- easy! Yet felt quite “fancy restaurant”, ha!
Salmon (I used a full plank of sockeye… try for NON farmed and US)
then working off the foil it would cook in, I added:
a drizzle of Olive Oil
Course ground sea salt
Finely chopped, Fresh Rosemary
A quarter- to a half of a bottle (bottle being 3.5 oz) Capers… drain a bit, but use some of the liquid.
Top with slices of lemon
FOLD THE FOIL UP AND BAKE IN A PRE-HEATED 500 DEGREE OVEN
20-25 MINUTES
THE SALMON WILL LIFT RIGHT OFF THE SKIN
