Breakfast Smoothie & Muffins

“Good for you” CAN be good… this smoothie is proof! Great to make early in the morning and easy enough to walk around in a cup with you around the house, as you finish getting ready for work or school. Tasty enough to sub as a milk shake at night while watching TV!

Here is the Muffin recipe as well… I LOVE this recipe and though it is called “Six Week Bran Muffin”- I’m not sure I would keep it 6 weeks? I do recall my Grandmother Paunee, (my dad’s mom & my Native American link- yes, she is named after the tribe, in our family tree) keeping it in a big jar in the frig. & it is so nice to make ahead and then just scoop from in the morning. My dad likes regular raisins, I prefer Golden raisins and have also used dates.

 

“SIX WEEK BRAN MUFFINS”

(if you have a small family- half this recipe)

6 cps of Bran Cereal

2 cups of boiling water (add to cereal above first)

4 eggs

2 cups of sugar

1 cup of oil

1 quart of buttermilk

5 cps of flour

1/2 box of Golden Raisins

5 tsp baking soda

1 tsp salt

3 tsp of cinnamon

 

Keep batter in frig. & you have fresh muffins all week!

Lightly oil muffin tins and bake at 400 for 20 mins

Serve warm with butter… and might I suggest, COFFEE

    I love making smoothies and I’m going to try this one tomorrow. Killian did an awesome job with the camera. I love that your dog was snoring – my dog wakes up the minute he even suspects I’m getting out food. Thanks!
