Easy- Cranberry Orange Sauce

Let me start by saying two things: The ripe Maypop was GOOD! …and I am NOT a “Can Cranberry Snob”.  I will eat cranberry sauce plopped right out of the can (if there’s no corn syrup in it)… However the FRESH Cranberry Sauce is SO EASY and the Orange is so good in there with it. I make it all winter and keep in the frig for a good snack. Keep in mind you could put other stuff in there… celery, apple, cinnamon. I’m a purist though, love just the simplicity of those two ingredients. The pecans seem to ground the battle of sweet & tart. If you are looking at the price of pecans in the store and fainting… grab walnuts instead. They’re a cheaper pick and hard to know the difference in the dish.

1 Bag of fresh Cranberries (washed… pick any bad/soft ones out)  

1 cup Sugar (I used a less processed, organic)

1 cup orange juice

Bring all that to a boil… and wait for the berries to pop

Then turn heat off and add:

1 can of mandarin oranges – DRAINED – (YES- you can use fresh orange)

1 cup of pecans or walnuts

1 tsp orange zest

 

Cool and refrigerate
