Lord, i have no pride… wet head, no make up. I wanted to make these VLOGS as close to being here with us as possible. They may have fun music or effects, but I did not want it to be another “show”. I do two of those on TV every weekday… at home, there is no TV makeup, TV clothes- just at home. This one was an early morning breakfast and so I was… “early morning”.
When I hear “Strata” …I want to say Eric, but that’s different. What is a “Strata” and when did a Breakfast casserole become one? When it left the country and ended up on some four star menu? Ahh… i have the answer.

Strata is a bread pudding-like layered comfort food casserole made with eggs, cheese and stale cubed bread (or sometimes hash browns).
Ok, so it’s the bread (soaked and cooked in the layer) that makes it a Strata! Call it what you will… I call it GOOD. This recipe is great on flavor and turned out perfect. You can make it ahead on a Sunday night and actually have a breakfast through out the week. It is also ready to impress any company you might have, or be given to someone who needs some help with a meal. The recipe I first found was right here: http://www.food.com/recipe/breakfast-strata-68404
I went mainly by it, but here’s what I did:
8 pieces of sourdough bread (let it sit out and get a bit stale if you think of it)
1 pound of sausage DRAINED WELL. I used venison sausage & there’s NO fat.
1 large block of Sharp Chedder Cheese
3-4 potatoes cubed small and boiled (salt to season)
1 cup of chopped green onions tops and bottoms
1 cup chopped parsley
8 large eggs
1 full teaspoon of Dry Mustard
1 teaspoon of Worcestershire Sauce
3 cups of Low Fat Milk
Just like on the video… layer top ingredients and pour the second half on top
You can refrigerate and cook the next day or let sit a bit and cook then
325 for about an hour & and 15 minutes
Let it sit for about 10 before cutting
(corner peices are the best, just sayin’)
BTW…
I’m thinking a SWEET variation of this w/raisin bread & apples…
we’ll try that next time!
Enjoy and remember…

Thanks for sharing. Got to try this one!
Your welcome… I bet you like it, but let me know. It’s filling & feeds a LOT or a few for a long time!
The ala natural look! This dish looks great. I would have never thought about using Worchester sauce. I make something just like that, but haven’t tried it with potatoes. Thanks for the idea!
Sure thing Chip… it would be good w/out the potatoes too but that dry mustard and worcestshire really do add a level of flavor that don’t scream either of those items individually but just adds that something.
Awesome, as always, Kimberly! While I usually don’t eat much for breakfast and I am definitely not a potato person, I am going to try this. I could almost smell it when you pulled it out of the oven.
You hit the nail on the head… it was the BEST smelling thing, omLawd! Hey, leave the potatoes out- it will still do just fine! Thanks for watching my “anti-work” Joel
