Mediterranean Sandwich

You know how restaurants bring you bread before your meal? This is a true story about how a Mediterranean Restaurant in Downtown Greenville, SC did theirs… TOO GOOD.

The first time they brought their pre-meal plate (which is free before your dinner, by the way) i looked at the waitress like a five year old, wanting to know what i was supposed to do with that? In front of me lay five items… few even looking like they belonged together. There was warm Pita Bread, Feta cheese, Butter, Radish slices & Mint leaves. Now i was looking for Food Network’s, Ted Allen (from “Chopped”) to round the corner and challenge me to make something from this miss-matched basket of goods.

The waitress smiled and whether to save my pride or in pure truth, she claimed i was not the only that asked “how do i eat this?”. She then said, “Put it all together”. It was like my tastebuds had been touch by the Greek gods themselves. i spent the next week craving those crazy basket items. I even called and ordered it “to go” thinking it would be a quick lunch between the TV Shows I do. They had no idea what to charge me, no one had ordered it as a meal. Well, dear “Pomegranate” that is about to change. They are my inspiration for this “Mediterranean Sandwich”. i have served this to many a guest and everyone seems as surprised as i was, that they loved it.

i grow mint… and anyone who does knows how it takes over your property. In fact, each Spring i thin it our and bring bags and bags of it to give away to viewers. Mint is great not only for this sandwich, but also hot teas, dessert garnish and helllloooo… Mojitos! That recipe will come this Spring!

Pita bread, i keep on hand, its often a lunch i carry to work with hummus and sprouts (laugh it up… try it… you’ll be hooked)

This is a very satisfying meal, but not one that bloats you and makes you go take a nap. Please, don’t let REAL butter scare you off. Don’t skimp on this. In moderation REAL butter is better for you than any Imitation ones.

i hope you enjoy you’re mini vacation to a rock lined Mediterranean Shore… that’s where this sandwich will take you, just grab a good light Mediterranean White wine blend to take with you!









The warm bread with the cool crunchy inside is a true treat.
