A good “roasting” could mean comedy, turkey or marshmallows, but it can also mean vegetables.
This Southern girl grew up with LOTS of vegtables! Everyone had a garden and what you didn’t grow… your neighbors and family shared, as did you. While it is true the South gets a bad rap for boiling away & frying their vegtables, we also had plates and plates of RAW… so we were not all bad. You might say we started that whole “raw movement”. Ok, we won’t go that far (ha).
You have to KNOW your food! Know where it came from, not which grocery store isle, but who grew it & how. It’s not that hard, most are labeled in the store now days and your local stand will burst with pride to tell you where they got theirs from. Take time to grow something… not everyone will have farms, but a child should know that a french fry had to be dug out of the ground at some point before it got covered in ketchup! Heck, plant a single tomato plant in a container and show them ketchup starts there.
I splurge… let me restate that…. I “invest” in organic and local anytime I can. Food is your lifeline, skimp on cable… going out or that new pair of shoes you’re dying for. Truth is, I don’t go down the junk isles… I don’t ever buy soft drinks… I buy an upgraded REAL raw sugar or stevia or agave instead of the upgraded “fake chemical sweetener”. I try and not waste my food… buy almost day to day or just 3 days out. Nothing hurts worse than tossing expensive organic goods that you “just didn’t get to”. I also save by finding my local guys. I have a road side stand I stop at each week, but there are even places like “Milk and Honey Organics” that deliver to your door. (find them on facebook) Then you get one of those baskets full of ingredients and you feel like your on a “competitive cooking show” (hahaaa).
Try what you are about to cook… in it’s RAW state whenever possible. *Clearly you need common sense here, I’m not talking meats! You may find a great raw food to enjoy later and you can learn the flavor of the whole food and work better with it.
I HATE the word “diet”… Eat CLEAN (free of processed & chemical) Eat RAW here and there and learn to roast vegetables, because you can have a meal with out meat here and there and even if you can’t- these go good with it. If you can’t pronounce it on the back of the box or can, put it back on the shelf. I may not live any longer than anyone else, but i will feel better and less bloated while I’m here

Gosh you make things look good and simple and tasty. And Ive not ever tried, I will try and, pass on. Thanks Kelly for sharing. I need this, kind of ideas. Im trying to change, to better eating.

Very Nice… interesting you choose to leave skins on Tip: shave a small slice off the bottom (Pan Side) of the squash. Keeps it from wobbling on the plate. Parsnips and Gold Beets roast nice too. All diced the same and fill the squash cup. Really nice touch with the Rosemary and Sea Salt…Kids at Furman are going to get this one soon ! : )
Thanks and GREAT TIP, gonna use that from here on out. Skins? you mean the squash? It keeps all that honey and juice in a cup kinda, then when you stire it all around to eat it’s a creamy mash almost
