I have some meals that are on file in my brain for when there’s not time to cook a full meal… cereal is not sounding good… a snack even.
Healthy can be quick & satisfying… this meal idea is proof. WARNING: you have to like mushrooms for this one. Sometimes I’ll grab a poblano pepper and cook it like this, but sharp cheddar over ot (yes minus the other peppers)
Right before I fixed this… I had rushed in from working “Fall for Greenville” festival. It was one of those nights where everyone “fends for themselves”. (ha) Jacqueline my dsughter had a peanutbutter & banana sandwich… Killian had chicken nuggets (love that Applehill brand in the freezer section- no antibiots or steroids)… Jason fixed pasta (his old hockey game day stand by)… and me, this quick & healthy ‘shrum! It’s not everyday that we all just grab what you can, but to have them here and there is kinda’ fun. Treat it like a treasure hunt for kids and let them pitch in with fixing their special find. Makes those bad days coming home late… not so bad.
