Butternut Squash Pie

Picture 1This is entry is about harder times. The times when though tough, you toughed it out together. It’s those same times you will long for when working late one night. Simpler times were not always shown from the tasty dishes on the table. A good cook can make make a lot out of little and make a king ask for seconds.

That pretty tree you see in the video will never match the cedars my dad would cut or the star he once made from cardboard and tinfoil (he was an artist… so it was beautiful!)

Growing up, I can remember one Christmas that must have been particular hard… we bought us a tree on Christmas Eve. Do you know how cheap you can get a tree on Christmas Eve? If I remember right, ten dollars. I had asked for a “jam box” (the equivalent to an ipod/ihome of today) I got one too! I was THRILLED, true I noticed a ding on one corner and there wasn’t a box. I was old enough to know. I however could have cared less that this was second hand- it was exactly what i wanted. i loved music growing up, I would sit in front of a radio like other kids sat in front of a TV. Funny, but THAT Christmas was one of the best. 

Butternut squash pie… not fancy, but really good! Proof that any night can be special. I was given this recipe by my grandmother (Mama Eva) It was during a phone call to Mississippi checking on her and she said, “you love pumpkin pie… try this”. I Loved it!

In all honesty, I have been known to have a slice of this pie for breakfast. When you think about it, I bet there’s less sugar in this than most cereals and bars people grab on the go… So here’s to pie for breakfast, lunch and dinner, enjoy.

 

 

BUTTERNUT SQUASH PIE

around 2 cups of BNS

baked them in the oven after slicing in half & salting…I also keep just a little water in the pan. The steam speeds the cooking & leave the smokey roasted taste at bay

1 cup of sugar (try and use the least processed sugar you can)

1 can of evaporated milk

2 eggs

2 tsps of cinamon

1 tsp Vanilla

bake at 350 in an unbaked pie shell

sprinkle some cloves on top

If you have it, top with real whipped cream

If you don’t… don’t let it stop you, it’s STILL good.
