Faux Pho Noodles

This past week, was CRAZY… myself and everyone at the TV station got a nasty cold/flu bug, I stayed off air two days to get better  -that’s odd for me- I usually keep pushing.  

Change of weather brings a change of health, many times. The sniffles and sneezes bring out the trusty ‘ol Chicken Noodle soup. How ever, if you’ve ever tried one of those “Pho Noodle” places- you know that they mix broth (you know, Mom’s Penicillin) and then they add at the lat minute fresh veggies and herbs. Well, we know that fresh and raw is best for vitamins…. thus my “Faux Pho Noodle Soup”. So put the can opener away, and keep the jammies on- you can stay in!

I still have herbs growing strong in med October here in South Carolina and their a great way to add “fresh” to anything.

Keep in mind, you can change up the veggies I used… add your favs, but I tried to stay close to what you might find at the Pho Noodle restaurants.

Along with chicken soup there and great home remedies, that we all use: hot tea, vicks vapor rub, nettie pots and more… and while this soup is good for those under the weather occasions- you do not have to be ill to enjoy.

FAUX PHO NOODLES:

1 LG CARTON OF ORGANIC CHICKEN BROTH

1 CAN OF COCONUT MILK

1-2 TBS SOY SAUCE

CURRY TO TASTE (I ONLY HAD ABOUT A TSP)

*CURRY TYPE OF CHOICE, I ONLY HAD SIMPLE YELLOW AROUND & IT WORKED

GREEN ONION

SUGAR SNAP PEAS (COOK TIL SOFT SLIGHTLY- KEEP THE BRIGHT RAW GREEN)

CARROTS (SAME BRIEFY COOKED AS ABOVE)

 

*COOK RICE NOODLES SEPARATELY (THIS WILL BE FAST) FOUND IN ANY GROCERY

*COOK CHICKEN SEPARATELY: I DID INEXPENSIVE- SKINLESS, BONELESS, THIGHS- BRINED IN SALT, PEPPER, CURRY, RED PEPPER FLAKES & SESEME OIL   (SEE VIDEO)

 

RAW INGREDIENTS:

BEAN SPOUTS

GREEN ONIONS

GRATED CARROTS

CHOPPED CILANTRO

CHOPPED BASIL

 

BUILD YOUR FRESH SOUP AS SEEN IN VIDEO!

1) NOODLES 2) BROTH 3) RAW INGREDIENTS  4) CRISPY CHICKEN
