Grilled Swordfish & Hot Pepper Infused Mashed Potatoes

Picture 1Food is a great gift. As a child I remember my mother making food for Christmas, my teachers, my class, those who were sick at church… heck, even at a funeral- food is there as we all gather around and remember. I can also remember a tough time growing up, when my dad was in the hospital and the church left us bags of groceries on the porch, to help out. Yes… Food is a great gift! Jason’s parents have recently moved to the coast of Maine and brought us some Swordfish. Straight to the grill it went!

Swordfish is a dense steak like fish- easy and quick to do on the grill.

I made some homemade mashed potatoes, w/ scotch bonnet pepper infused butter- to go with this hardy fish. I will say, the butter was good, but the Jalapeno butter is my favorite flavor.

I get major points off for not having a green veggie with it all, but we had spent all day out on the water and I was NOT driving into the store. Well, as you can see… I wasn’t even going to put on make-up. I laughed today when I saw that the ladies from the “Talk” (and i love, love Sharon Osbourne btw…got to work with her once) …but they had this big promo with the big climaxing music: The ladies appear today , with no lipstick, no eye lashes, no make-up…. Hahaaa. Really? I find it so sad that we’re somehow all fooled that people look like that all the time. Listen, I don’t think twice about no make-up. I have fun dressing up, but it does not define me. We should make sure we raise our girls to be comfortable in their skin… THEIR skin, before they choice to alter or accessorize.

Swordfish:

Olive oil, salt, pepper, lemon zest, (any herb you want to add)

On a Very hot grill go about 6 mins per side

splashed w/ Bacon Vodka at the end, cook the alcohol off & set aside covered to “rest”

 

Hot Pepper Butter Infused Mashed Potatoes:

Hot pepper of your choice SIMMERED, not boiling in butter

(the longer it simmer the hotter it gets… just taste along the way)

add  to Mashed potatoes for everything from flavor to heat… as you wish.

    GREAT idea for the mashed potatoes. Just what I need to satisfy my need for heat with any dish, especially grilled fish !! YUM!!
