Roast & Spicy Arugula

Picture 1Slow cooking reminds us to slow down… something we all need reminded of. In a “slower time” I remember pot roast on a stove in Mississippi in my grandmother (Mama Eva) house. I LOVED it so and we would often eat it atop a piece of toast. Now days, I rarely eat processed bread. Research how they sell us “dead wheat” and how we don’t digest it and you will realize white or wheat… REAL bread should NOT last on a shelf that long! Now my grandmother never used the garlic or Pinot Noir I did in this roast… but there is nothing wrong with what my sister, Jennifer refers to as a “salt & pepper cook”. Basic seasonings done right, are memories of mine forever.

I find myself longing for that “slower time” and yet life gets faster the older I get. Most every food you eat, makes a memory… much like a song. I remember where I was when I heard this… tasted that… cooked for me… I cooked them. Slow down, walk memory lane and make a meal for your family that you can also share stories with.   

 Often winter foods are so heavy and this recipe has the hardy stick to your ribs side, but those fresh greens- keep it light. I love horseradish with roast and the spicy arugula gives you that feel. 

Those radish Micro-greens are a new find or me… they are addictive though! I love to boil a potato & fix it like a baked potato (butter, sour cream , salt and pepper) topped with Radish Micro-greens, what a great quick lunch or dinner. Big thanks to “Milk & Honey Organics” for introducing those to me… the greens are from a farmin Seneca, SC.

I’m not doing a written recipe on this weeks- it’s more of an “Idea” segment. *Flour on that roast & sear before slow cooking makes great gravy *Fresh greens like Arugula under your Roast makes an impressive twist on the old family favorite
